Gulabjamun ki Sabji Recipe :

Ingredients Shortlist
​For Jamuns: 100g Mawa (Khoya), 2 tbsp Paneer, 1 tbsp Maida, pinch of Baking Soda, Ghee for frying.
​For Gravy: 1 cup Curd (whisked), 2 Tomatoes (pureed), 1 tbsp Ginger-Garlic paste, Cashew paste (optional), Spices (Turmeric, Chili powder, Coriander powder, Garam masala, Kasuri Methi).

Instructions
​1.Prepare the Jamun Dough: In a bowl, mash the Mawa and Paneer together until smooth. Add Maida and a pinch of baking soda. Knead into a soft, crack-free dough.
​2.Shape and Fry: Form small, cherry-sized balls from the dough. Heat ghee in a pan on low heat and fry them until they turn golden brown. Set aside (Do not put them in sugar syrup!).
​3.Prepare the Base: Heat 2 tbsp oil or ghee in a heavy-bottomed pan. Add cumin seeds (Jeera), a bay leaf, and a pinch of hing (Asafoetida).

​4.Sauté Aromatics: Add ginger-garlic paste and chopped green chilies. Sauté for a minute until the raw smell disappears.
​5.Tomato Masala: Add the tomato puree and cook until the oil starts separating from the sides of the masala.
​6.Add Spices: Lower the heat and add turmeric, red chili powder, and coriander powder. Stir well to combine the flavors.
​7.The Curd Mixture: Whisk the curd with a little water. Slowly pour it into the pan while stirring continuously on low heat to prevent the curd from curdling.
​8.Simmer the Gravy: Cook the gravy for 5–7 minutes until it thickens. Add cashew paste at this stage if you want a richer, “Shahi” texture.
​9.Combine: Add salt to taste, a teaspoon of Garam Masala, and crushed Kasuri Methi. Gently drop the fried Jamuns into the gravy.
​10.Final Touch: Simmer for just 2 minutes (don’t overcook or they might break). Garnish with fresh coriander leaves and serve hot with Naan or Paratha.
